Here are the most recent food safety violations in Lebanon County, as documented by Pennsylvania’s Department of Agriculture.

Inspections are taken as a “snapshot” of the day and time, and should not necessarily be taken as overall indicators of an establishment’s cleanliness. Violations are often corrected prior to the inspector leaving the site. Restaurants were found to be in compliance unless otherwise noted.

3 – 501.19 Time as a Public Health Control Time in lieu of temperature should be used as a control for potentially hazardous foods (flour for dredging chicken), but it is being held for more than 4 hours.

4 – 601.11(A) Equipment, Food Contact Surfaces, Nonfood Contact Surfaces and Utensils The slot on the rack for holding cutting boards, a food contact surface, was observed to have residue and was not clean to sight and touch.

6 – 501.111 Controlling Pests Potential rodent harborage areas inside the food facility observed in the facility due to a few rodent droppings under the sink in the rear.

Found to be out of compliance.

3 – 302.11 Packaged and Unpackaged Food-Separation, Packaging & Segregation Raw chicken was stored on top of pork in the walk-in cooler.

3 – 302.12 Food Storage Containers Identified with Common Name of Food Containers of sofrito were not labeled.

4 – 101.19 Materials for Surfaces that are Nonfood-Contact Surfaces Cardboard, in was being used to separate containers of sofrito; it was spilled onto the cardboard. Cardboard cannot be properly cleaned.

4 – 502.11(B) Food Temperature Measuring Devices Calibrated Thermometers for ensuring proper food temperatures are not calibrated and/or functioning properly. The cover of one thermometer was cracked.

3 – 305.11 Food Storage, Preventing Contamination from the Premises Observed food stored directly on the floor under a table in the meat cutting room, rather than 6 inches off of the floor as required.

4 – 601.11(A) Equipment, Food Contact Surfaces, Nonfood Contact Surfaces and Utensils White buckets were stored upside down on the floor in the meat room and were not clean to sight and touch. The employee in the meat room completed cleaning the band saw and a meat grinder; both items had significant amounts of raw meat residue and other debris remaining on the equipment which is a food contact surface. A container of food utensils, a food contact surface, had trash in the bottom of it and it was observed to have food residue and was not clean to sight and touch.

4 – 602.13 Nonfood-Contact Surfaces Non-food contact surfaces not cleaned at a frequency to preclude accumulation of dirt and soil; specific examples are the strip curtains by the meat prep room and the door handle of the walk-in cooler.

3 – 307.11 Miscellaneous Sources of Contamination Foam trays for meat were soiled with meat juices and were not clean. Discarded.

5 – 204.11 Handwashing Sinks-Location and Placement A sink for handwashing needs to be identified or installed by the deli. Paper towels for the handwashing sink were directly over a container of clean utensils.

6 – 102.11 Surface Characteristics-Outdoor Areas Weeds over 12″ tall were observed along the front of the property.

3 – 304.14 Wiping Cloths, Use Limitations Observed a wiping cloth on the meat band saw with food residue.

4 – 101.11 Characteristics – Materials for Construction and Repair Drawer in refrigerator is cracked and broken.

5 – 501.12 Outdoor Enclosure Area around the outside of the building had trash and garbage around equipmemt and the building.

6 – 404.11 Segregation and Location-Distressed Merchandise An assortment of meats were in a white pail without any identification. (Later the owner reported that the items were to be discarded, but employees were not certain about the disposition of these items.) Distressed merchandise should beidentified and clearly segregated from other food.

6 – 501.114 Maintaining Premises, Unnecessary Items and Litter Frequency of cleaning under equipment is inadequate as evidenced by dirt and debris under equipment.

3 – 305.11 Food Storage, Preventing Contamination from the Premises Dust on overhead structures in prep area posing a risk of contamination.

4 – 601.11(A) Equipment, Food Contact Surfaces, Nonfood Contact Surfaces and Utensils Assorted containers on drying shelf were observed to have food residue and were not clean to sight and touch. REPEAT VIOLATION Drain board of prep sink not clean to sight and touch being used for preparing onions. The onions were removed, peeled, trimmed, and placed in a clean pan.

4 – 602.13 Nonfood-Contact Surfaces Non-food contact surfaces, such as shelving, not cleaned at a frequency to preclude accumulation of dirt and soil.
